Rare roast beef sandwiches with blue cheese dressing
INGREDIENTS
1 tablespoon olive oil
salt and pepper
1.2 kg beef silverside
40g blue cheese, crumbled
2/3 cup sour cream
1/3 cup mayonnaise
1 ½ teaspoon Worcestershire sauce
8 slices of bread of your choice!
1 butter lettuce
2 vine ripened tomatoes, sliced
METHOD
Preheat oven to 200°C. Season beef well. Heat olive oil in an oven proof pan and sear beef on all sides. Roast in the oven for 25 mins and reduce temperature to 150°C and continue to cook for further 15 minutes. Allow to rest for 20 minutes before slicing.
In a small bowl mash blue cheese with a fork and stir in sour cream, mayonnaise and Worcestershire sauce until smooth.
To assemble sandwiches top each piece of sour dough with a lettuce leaf, 2 slices of tomato and 2 generous slices of beef. Drizzle with the sauce and top with remaining slice of bread.
