Mixed Berry Jam
INGREDIENTS
750g strawberries, hulled, quartered
480g raspberries
300g blueberries
6 cups 1.32kg sugar, warmed
80ml lemon juice
NOTE: This recipe makes 6 small jars of jam.
METHOD
Combine berries in a large saucepan, simmer over low heat for about 5 minutes or until the fruit is soft. Test for pectin.
Measure the fruit mixture and allow (220g) of sugar to each cup of the fruit mixture.
Return fruit mixture and sugar to pan, stir in the lemon juice. Stir over heat, without boiling, until sugar is dissolved. Bring to boil; boil, uncovered, stirring, occasionally, for about 35 minutes or until jam jells when tested.
Pour hot jam into hot sterilised jars; seal while hot. Invert the jars until cold.
